SMALT is an amalgamation of two words, 'smoked' and 'salt'.
My partner Cade and I love to cold smoke all sorts of food, we particularly love smoked salt, we use it as a condiment and as an ingredient in our daily meals.
Finding a store that stocked locally smoked salt was becoming a tricky task. I guess that was the fuel behind the idea of us smoking our own – so we would never run out again! We did some research and found that apple wood is a great wood source for smoking salt, the smoke it creates isn’t too strong in aroma or flavour and allows the salt to still be tasted below the smoke.
It is definitely a labor of love, it is a slow process. Three key ingredients we use in our SMALT cold smoked salt preparation are: Apple wood chips, time and love.
SMALT also make three very delicious fudge varieties. Smalted Caramel Fudge, Dark Chocolate and Coffee Fudge and Smalted Caramel Fudge infused with hop oil aka: “the beer fudge”.
